The process of freeze-drying (lyophilization) is based on the physical principle of sublimation.
After freezing, the water bound as ice is gently removed from selected, freshly harvested raw materials. Under vacuum, water has the ability to transform directly from a frozen to a gaseous state. The freeze-dried product thus loses a large portion of its weight while retaining its typical properties such as flavoUr, texture, and nutrients.
